Step-by-step instructions
1) Prep the oven and pan
Preheat oven to 350°F (175°C). Line a 12-cup muffin pan with paper liners.
2) Mix the dry ingredients
Whisk together flour, sugar, baking soda, cocoa powder, and salt in a bowl to prevent cocoa lumps.
3) Mix the wet ingredients
In a second bowl, whisk oil, buttermilk, eggs, vanilla, vinegar, and red gel food coloring until smooth.
4) Combine wet and dry
Pour wet ingredients into dry mixture. Fold gently with a spatula just until combined—do not overmix.
5) Fill the liners
Divide batter evenly among liners, filling each 2/3 full for optimal doming.
6) Bake
Bake at 350°F for 18 to 22 minutes until a toothpick inserted in center comes out clean.
7) Cool completely
Cool in pan for 5 minutes, then transfer to wire rack to cool 100% before frosting.
Cream cheese frosting (smooth and stable)
Beat cream cheese and butter for 2 minutes until creamy. Gradually mix in powdered sugar, vanilla, and salt until fluffy. Pipe onto cooled cupcakes!
